In the early 1900s, the Pacific Northwest canned salmon industry took steps to improve the quality, taste, and appearance of its product. Fishermen received instructions on proper storage methods, canneries were inspected for cleanliness, and compliance with federal pure food laws was made a priority. These and other efforts led packers to market canned salmon as “fresh.” In this presentation, Everett resident Dr. Ross Coen will describe the early history of an industry that was and remains vital to the Pacific Northwest. Coen is an instructor in the History Department at the University of Washington where he teaches courses on Washington state history, environmental history, U.S. citizenship, and polar exploration.
